Herbalife Heart Healthy Meal Salmon with Avocado Salsa

Ingredients:
2 lbs wild salmon, cut into 4 pieces
1 lemon, cut in half 1 lemon, sliced
10 sprigs of parsley
5 sprigs of thyme
4 cloves of garlic, smashed
3 shallots cut in half
2 bay leaves
2 tbsp whole black peppercorn
Salt

For the avocado salsa:
1 avocado, sliced
6 cherry tomatoes, halved
¼ cup small red onion, diced
Juice from 2 limes
1-2 tbsp finely chopped cilantro (depending on how big of a cilantro lover you are)
Salt to taste

Instructions:
In a shallow pan, bring water to a simmer. Add lemons, parsley, thyme, garlic, shallots, bay leaves, peppercorns and salt. Let it flavor for 5 mins.

Add salmon to the poaching liquid and cook 8- 10 mins.

Combine the avocado, tomatoes, onion, cilantro, lime juice, and salt in a bowl and mix well. Chill until ready to use.

Top with avocado salsa and enjoy!
